- Nachos for Who?
Nachos were made long ago in the 1940s in Mexico. A cook named Ignacio, known as “Nacho” to his friends, first made the Nacho’s for a group of U.S. military wives who had arrived after the restaurant closed. He used chips, cheese, and beans.
The dish became popular in Ignacio’s town and then in neighboring Texas. The apostrophe was dropped as it crossed the border, and the dish became popular around the southwest and the around the rest of the U.S.

Route 66 Microwave Nachos Recipe

Ingredients:
- Tortilla chips – 2 cups
- Shredded cheese – 2 cups
- Canned beans (black or pinto) – 1 cup
- Salsa – 1 cup
- Optional toppings:
- Sliced jalapeños – ¼ cup
- Olives – ¼ cup

Carefully remove the plate from the microwave (it may be hot!) and enjoy your Route 66-inspired nachos.
Prepare the Plate:
Spread the tortilla chips evenly on a large microwave-safe plate.
Add the Toppings:
Sprinkle the shredded cheese over the chips.
Add the canned beans and salsa evenly across the plate.
Add optional toppings, such as jalapeños or olives, if desired.
Microwave:
Place the plate in the microwave and heat on high for 1-2 minutes, or until the cheese is melted.
